I usually just pop them in my mouth, skin and all, but a few were starting to mold so I needed a quick fix. Voila, kumquat jam.

I boiled then simmered them with sugar, water, vanilla, and a pinch of sea salt for about 30 minutes, stirring often, until the water had reduced to a thick syrup-like consistency.

Serve with a sprinkle of sea salt on a bagel or cracker or whatever you desire.
