The most simple ingredients for one of the best dishes! Rosemary + garlic + lemon + olive oil to marinate chicken for a few hours before roasting in the oven 😋 this makes a great family dinner for a weeknight - I take 5 minutes in the morning to throw the ingredients together in a big ziplock bag, trim some chicken and toss it in there! When you’re ready to eat, pop the chicken in the oven for 35 min at 350 degrees. The kitchen smells soooo good!!! As the weather warms up, I get less patient to spend a long time in the kitchen- I just want to be outside with my 4 kids after school! Today we have 80 degrees and pure sunshine here in ATL and the summer vibes are strong - how much longer until we can spend all day at the pool? 🤪

Easter is right around the corner and although I don’t celebrate the holiday, I know how difficult any type of holiday can be with #guthealth issues. From wondering “will I be able to eat anything?!” to being anxious about potential stomachaches, holidays can turn from fun to not-so very quickly.

This paleo, vegan and SCD friendly “cheesy” cauliflower casserole made with  @bobsredmill almond flour and nutritional yeast is the perfect dish to whip up for this weekend 😌 I’m always so grateful for how easy @bobsredmill makes gut-friendly cooking and baking with their wide range of quantity flours and products 👏🏻

🌟INGREDIENTS: 1 medium head of cauliflower, 1/4 cup almond flour, 1/2 cup nutritional yeast, 1 tsp salt, 1/2 tsp pepper, 1/2 tsp garlic powder, 3 Tbsp almond butter, 3 Tbsp avocado oil, 1/4 cup water or almond milk, 1 cup shaved Brussels sprouts, 1/3 cup chopped leeks
🌟INSTRUCTIONS: start by chopping your cauliflower into small florets and blanch for 5 minutes (pre-cooking like this BEFORE baking makes it even easier on your stomach). While that’s cooking, make the sauce by combining all ingredients (besides the Brussels sprouts and leeks) in a blender. Once the cauliflower is done being blanched, drain and place in a large bowl. Pour the sauce on top, add in the shaved Brussels sprouts and stir well. Place in a casserole dish and bake for 15-20 minutes in 350F. Sauté the leeks and add on top. ENJOY!

Shopping on a budget is easier than you think. I love going grocery shopping and planning out my meals for the week but for some it can be a very daunting experience and it doesn’t need to be. Here’s a few tips for shopping on a budget:

Buy in the bulk section. The bulk section is your best friend.. I love to stock up on rice, beans, nuts, seeds, grains and flours.  The bulk section is usually cheaper and it’s a great way to cut down on plastic packaging. (I never leave home without my reusable produce bags- Amazon has a bunch for under $15)

Buy frozen fruits & veggies. I love making smoothies, açaí bowls and putting fruit on top of my oatmeal. However I always make sure I buy frozen fruit because it’s cheaper and it’ll last forever.  Same thing goes for frozen veggies to add to your smoothies or even for dinner. It’s a great to not worry about it going bad

Compare unit prices. When shopping for things like pasta, bread, milk or anything that’s not produce it’s easy to feel overwhelmed by all the brands and different sizes. Easiest thing to do is look at unit price on the tag where it’ll tell you how many dollars per ounce

(These are technically manicotti but whatever) They are stuffed with lean ground Hamburg, lots of garlic and fresh basil so they are super flavorful and there is a full serving of spinach. Not to mention a serving size is three of those bad boys so they are super filling. .

Healthy eating is not all or nothing. When you eat the right foods in the right portions the results will come. If you don’t like the food you are eating then it’s not something you will keep up with. Get inspired in the kitchen! .

Big batch of chicken & veggie curry to eat this week 😋 Curry dishes are some of my favorite because you can mix and match different proteins and veggies and it always turns out delicious! #nourishedbyrachael ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 lb chicken breast, cut into bite sized pieces 
1 onion, diced 
1 tbsp garlic, minced 
1 bell pepper, diced 
2 cups chopped broccoli 
1 cup shredded carrots 
1 can coconut milk 
2-3 tbsp Thai Kitchen red curry paste ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
1. Sauté onions and garlic until tender. Add chicken and cook until browned. Remove chicken mixture from pan and set aside
2. Add bell pepper, broccoli, and carrots and sauté for 2-3 minutes. Then add red curry paste and coconut milk, stir to combine. Add chicken mixture back to pan. 
3. Cover and cook on low for about 15 minutes to let the flavors set in. 
4. Eat by itself or serve over rice or cauliflower rice and enjoy!

Whatever my focus is for the day this journey has made me so much stronger - mind, body and soul in order to handle situations with a different perspective and mindset than before (which just means with a lot less pessimism). Especially during days that I need and IV of coffee and a packed schedule of things to do.

Took my sister to @chiringaatl for lunch today and it did not disappoint 🙌🏻 Their elevated beach food and colorful menu items definitely hit the spot! We started out with their guacamole and pico de gallo paired with plantain chips & tortilla chips and I have to say these were THE BEST PLANTAIN CHIPS EVER! Then I had their fish tacos with arugula, red cabbage, pickled onion, jalapeño, and chipotle crema on a corn tortilla 🌮🥑 If you’re in the Atlanta or Alpharetta area, you should definitely check them out! It’s such a daunting thought to reflect on the fact that when I was kid I thought vegetables were gross. Now I crave them for a bunch of reasons:  1. They make me full and help me avoid that post meal sluggish feeling.
2. When I consume enough, I’m able to kick my daily snack cravings in the tush.( not all the time. I’m a work in progress though.)
3. Also you can dress them up however you want. (I’ve come to rely on lime juice, chili powder or maybe some tajin... 😉)

Post workout breakfast this morning and I’m so obsessed with this combo lately 👉🏻 sauté cauliflower rice with some salt and pepper until cooked to your liking and put in a bowl as your base. Then scramble 2-3 eggs until cooked through. Top your cauli rice with the scrambled eggs + top with some cheese or avocado and enjoy! It’s such a yummy combo and is a great way to eat some veggies for breakfast! 😋#nourishedbyrachael

If you get sick of chicken because “it’s bland” spice that ish up! There are sooo many ways to cook chicken. .

Last night I used garlic powder, onion salt, basil, oregano and “blackened seasoning”. Just cooked it in a pan with a little olive oil and that’s it. I like to keep things simple but with lots of flavor.

Also, if your chicken is always super dry you are cooking it too long. Getting the cooking time down will help a lot and keep yo chicken juicyyyyy. .

Brussel sprouts were air fried and then drizzled with a little balsamic vinegar. 👌🏻 Easy clean up and everyone ate it, win-win. .

It’s #foodiefriday so I wanted to introduce you to my newest obsession.. Dragon fruit! Not only is it pretty, but it’s packed with vitamins, antioxidants, fiber, & prebiotics! .

Dragon Fruit Smoothie Bowl.
🐉1 cup of frozen dragon fruit.
🌿1 scoop of vanilla protein powder.

Lots of studies show the positive effects of GREEK yogurt way above other types of dairy.  So maybe I’m a little obsessed ...I eat it probably 3-4 times per week🤷‍♀️🤷‍♀️🤷‍♀️. ..

REMEMBER - it’s a scientific fact, the less calories you eat combined with what you burn, #duh you’ll lose weight. But just because you lose weight, doesn’t mean it’s always healthy. 
I used to eat 500 calories a day before doing things the right darn way. It’s not something I’m proud of. But there’s a huge difference between whole food and empty calories. 
I would NEVER promote something filled with crap that doesn’t give long term benefits. And I’d never drink a shake that I wouldn’t give my own babies. 
Eat the right dang foods to be healthy long term, not short term. Drink a shake full of good ingredients the enhance your health and results, not something with ingredients linked to health issues. Get your #booty moving. Your FUTURE you will thank you!
