Just a little mid-week reminder that YOU’RE DOING GREAT! 💙💚 Winters are hard, especially in the sad & cold snow.
Remember that being stressed, anxious and feeling lost are a part of life. Most weeks, I feel like I have 101 things to do a day and not enough time.
Take a step back, breathe and reevaluate.
My favourite ways to stay organized and on top of my stress levels are to WRITE THINGS DOWN. Whether it be in an agenda (my fave), your phone reminders or a random piece of paper!

Whatever stress you’re feeling at this point in the week, YOU’RE HALFWAY THERE!

If you saw my stories over the weekend you know that we are now proud owners of a 25lb bag of dried pinto beans 🤦‍♀️ It actually pairs well with the fact that I’ll predominately consume processed carbs if I’m not careful 😂 (which is FINE based on my veggie intake & activity level but it doesn’t do a whole lot in the satiety department). Sooo made the first dent cooking 1lb in the pressure cooker (beans + 8 cups water + 1 tbsp oil >> 12psi 20 min natural release 👍). Brace yourselves for a.lot.of.beans.
LUNCH = sautéed onions, green beans, chicken, pinto beans + a smidge of hoisin sauce, sriracha, & 5 spice seasoning.

Okay guys, back to our regularly scheduled programmed of non sweets 😅. V-day got the best of me but I’m back in the kitchen re-making your favorite foods with healthier, better for you options! <insert amazingly yummy quesadillas>. I have been on the HUNT for a tortilla with clean ingredients!! It’s super hard to find a decent one at my local Publix/Kroger but a brand I’ll get from there is @foodforlife sprouted tortillas. Well, I went to @Sprouts recently and decided to check & found @Mikeys tortillas!! 😍 You’ll find both those brands in the freezer bread section - since they aren’t full of fillers & preservatives this helps them stay fresh. These quesadillas were super quick to make & husband approved as the best ones I’ve made so far 😏. You can sub out ground beef for chicken, black beans, steak, or whatever is your favorite! @mikeys tortillas + grass fed ground beef (or any protein you like) + 1/2 onion + 1/2 bell pepper + taco seasoning + organic shredded Mexican style cheese (I used simple truth) + a little bit of ghee for the tortillas to toast (I used @fourthandheart) + fresh guacamole or salsa on the side to dip!

Lunch today was simple leftovers from last nights dinner
We have a lovely open plan office however the staff lunch room is a bit small and you can feel like you are all cramped together and we are not allowed to eat hot food at our desk even if it doesn’t smell 😫😫 So currently trying out cold food items for lunch I don’t need to think too much about breakfast or dinner but find interesting lunch options can be a bit more tricky

*rinsed quinoa *sliced bell peppers and onions
*diced zucchini

*bone broth

—>cook it all up on low for 4-5 hours and serve on a bed of arugula tossed with lots of lime juice and sprinkled with cashews and cilantro.
Oh and pack up your leftovers for lunch and try my cashew sneeze joke in the break room. You’ll make new friends, trust me😉

Brown rice, Whole Wheat, Lentil, Chic Pea, Corn, Quinoa, Zoodles- Confused which is the healthiest?! The long and short is: zoodles or Zucchini Noodles are healthiest because they are a whole plant food. Anything else is considered processed food, but for the times you just want a little extra 👉🏽👉🏽

🍝Lentil, quinoa or chic pea: are going to give you the best protein to carb ratio. 🌾 Whole Wheat: should be avoided if you don’t want to carb crash, are sensitive to gluten, have autoimmune disease.
🌽 Corn: unless it’s certified non GMO, avoid like the plague 🙅🏽‍♀️ we don’t process corn well and frankly it doesn’t taste great!
🍚 Rice Pasta: I save this when eating out At Vietnamese Restore. Again you can carb crash and it doesn’t add a lot of nutritional value

This is how intuitive eating and fitness nutrition can line up. I want to fuel my body properly especially after my workouts. I also want to enjoy my baked goods and not feel restricted in my choices...here’s my thought process... I just got in an awesome lifting workout and I’m pretty darn hungry. I know I need veggies,carbs and protein to properly fuel my body again.
We have some leftover @milknhoneynutrition macadamia French toast bake. That sounds really good and it’s low in sugar so I know it won’t hurt my tummy. It also has a good amount of carbs to refill my glycogen stores. I also want some quality protein and veggies, so I’ll have a side chicken salad with it.

Mix together and then add roasted veggies, grains, and/or protein whenever you need complete meal throughout the week.

CURRY TAHINI DRESSING
(Makes 6-ish servings)
⠀⠀⠀⠀⠀⠀⠀⠀⠀
In a bowl, combine 1/2 cup tahini paste, 2 tablespoons freshly squeezed lemon juice, 1 tablespoon coconut aminos (if using), 2 minced garlic cloves, and 1-2 teaspoons curry powder (start with 1). Whisk in warm water one tablespoon at a time until dressing reaches a pourable consistency (usually 6-8 tablespoons). Season with salt, to taste, and use or refrigerate in an airtight container. (If storing, stir in a bit more warm water before using if dressing thickens in the fridge).

ZUCCHINI FRIES🥒🍟 1 large or 2 small organic zucchini
1 1/2 c almond flour
3-4 tbsp blackened cajun spice (check ingredients), optional.
1 tsp sea salt
1 organic egg
Cooking Directions
Preheat oven to 425 degrees. Beat egg in a small bowl. Combine almond flour, spices, and salt in another bowl. Cut zucchini into french fry sized rectangles. Dip a small handful of zucchini fries in the egg and dredge in the almond flour mixture. Be sure they are well coated and place on a baking stone or parchment lined baking sheet. Cook for 20-30 minutes or until brown and crispy. Serve immediately.

I’m baaaaack. 🙋🏻‍♀️ Still slightly exhausted from my trip to Pennsylvania/New York and have a lot of things to catch up on now that I’m home. One of the things that’s lower on my to-do list: grocery shopping. Thankfully I have plenty of staples in the pantry and fridge to last me a few days. I personally feel like I ate enough food in NYC to last me through the week anyway. 🍪🍕🍝 However, I did come home to a package from @eatbanza that included their new chickpea RICE! So, of course I had to get on top of trying that today. ————————————————————————
CURRIED LENTILS WITH RICE
(Serves 1)
1 tbsp ghee
1/4 yellow onion (diced)
2 tsp minced garlic
1/2 cup carrots (chopped)
1 tsp curry powder
1/2 tsp turmeric
1/2 tsp black pepper
1/2 tsp ground ginger
1/4 cup coconut milk
1/2 cup vegetable broth
1/4 cup sprouted green lentils (rinsed + drained)
1 serving rice of choice
1. In a medium pot on the stovetop, bring to medium-high heat and add ghee. Once melted, add garlic, onion, and carrots. Cook until fragrant (2-3 minutes), stirring occasionally.
2. Add all seasonings and sauté for an additional 2-3 minutes, stirring occasionally.
3. Pour in broth, coconut milk, and lentils. Stir and bring to a boil.
4. Once boiling, lower to a simmer. Cover pot with lid and let sit for about 15 minutes.
5. While waiting on the lentil mixture, cook rice by following directions on the package.
6. Remove lid, turn off heat and stir. Serve over rice. Additional topping ideas include: more coconut milk, red pepper flakes, black pepper, or cilantro.

Instant pot dinners are the best. Frozen to delicious in 20 minutes! Cooked with sauteed garlic, onion and mushrooms. Add a little seasoning too. And I love how each person in the family can add veggies as they want. For me carrots and snap peas. My son made a chicken bowl. So fun!

Let's Taco' bout it. People ask me all the time to define my cooking style but it's hard to put in a bag the culture of the cuisine I like to create. Mostly my creations come from cravings. Looking to bust through the normal menu with a highlight on vegetables. Here is an easy meal prep for the week; lentils, beets, sweet potatoes and some avocado because avocado is life 🙃

Bring 1 c of lentils and 2.5 c of water to boil and let simmer. Towards the end add in some seasoning to spice it up. I added some paprika. •

Toss sweet potato and beats in avocado oil and bake for ~40m at 475. I sprinkle everything but the bagel seasoning on top (can be found at Trader Joe’s) •

It’s super simple, but when you are constantly busy it makes life easy. •

A little afternoon “pick me up”! 🍎
Fruit is nature’s candy and the best solution to combat an afternoon slump, especially when paired with a protein-packed sidekick like almonds! My husband and I both work late on most weeknights, which means dinner is not typically until 7:30-8:00pm. 😱 So, I try to plan the rest of my meals and snacks to assure I don’t go longer than 4 hours without eating. Depending on how my work day lines up this can sometimes be tricky! The message here is that it is okay to arrange your meals to work with YOUR schedule.
Cilantro is heavenly. It gives such great flavor while benefiting us in very unique ways. In this modern world, we typically have too many heavy metals in our bodies. They are really great at working their way into all different parts of your body and being difficult to remove. This (negatively) affects us in many ways, but cilantro naturally helps to detox these metals!

It’s one of those win, win situations… it tastes amazing and you KNOW it’s pushing your health another step forward. You can consume it as a tincture in liquid form, or add the leafy herb to your food (smoothies, guac, veggies, meat, rice, etc.)

In the past, we struggled with buying cilantro just to watch it go bad within 1-2 days in the fridge. Putting it into a jar with ½-1 inch of water and a bag overtop keeps it fresh for weeks! It’s awesome. We rinse it before storing so that we can always just pull out the jar, rip off a handful, and add it to our food easily. 😁

Serious game of would you rather: have to eat dessert every day for two meals a day or have to eat tacos every day for two meals a day?! Combine all ingredients together in a microwave safe dish. Microwave for 1 1/2 mins - 2 mins.

▫️Whole Wheat Pita Bread
▫️Tzatziki Sauce {deets below}
▫️Hummus {deets below}
▫️Eggplant Falafels {deets below}
▫️Radish, sliced
▫️Cherry Tomatoes, halved
▫️Onion, sliced
▫️Cilantro

Tzatziki Sauce:
▫️1/2 Cucumber
▫️10 oz Greek Yogurt (@siggisdairy)
▫️1/2 Lemon Juiced
▫️1 clove Garlic
▫️1 tbsp Avocado Oil (@heb)

Hummus:
▫️1 can Chickpeas
▫️Lemon Zest
▫️1/2 Lemon, juiced
▫️1 tbsp Sesame Oil (@kikkomanusa)
▫️2 tbsp Water
▫️Salt & Pepper

Eggplant Falafels:
▫️Eggplant, sliced
▫️Panko Breadcrumbs (@progresso)
▫️1/2 cup Whole Wheat Flour
▫️1 tbsp Cumin & Chili Powder
▫️1/2 cup + 2 tbsp Water
▫️Salt & Pepper

Tzatziki Sauce: Grate the cucumber, sprinkle salt, & drain excess water. In a food processor, add in all the remaining ingredients. Pulse to mix together. Add the cucumber back in & use a spoon to mix. Set aside in a bowl.

Hummus: Pulse together all ingredients in a food processor. Add in the oil & water while pulsing the chickpeas. Set aside in a bowl.

Eggplant Falafels: Slice the eggplant, sprinkle salt on both sides, & drain excess water. In a bowl, mix together flour, cumin, chili powder, & water- this makes the batter. In a plate, lay out the breadcrumbs. One by one, dip the slices in the batter, then coat each side evenly in breadcrumbs. Place into the air fryer (don’t overlap the slices, may need to do two batches). Cook at 400° for 10 mins.

Beautiful Saturday down here in Houston today ☀️ Not sure why it took me so long to try out the new veggie noodle egg nests breakfast trend (mouthful), but boy I’m glad I made some today!😍 Hope you all have a wonderful weekend & get some Vitamin D 🏃🏽‍♀️

What’s on my plate🍴
▫️1 Spiralized Zucchini (@cecesveggieco)
▫️2 Cage-Free Brown Eggs (@vitalfarms)
▫️1/2 Avocado
▫️Seasonings- Garlic Powder, Chili Powder, Red Crushed Pepper, Salt & Pepper
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Cook the zucchini noodles in a pan for roughly 2 mins. Make sure to dump out any excess water. Then add in all the seasonings except the red crushed pepper.
Cook for another 2-3 minutes & then separate into two little “nests”. Crack in an egg into each nest. Cover for a little to let the egg whites set.
Serve with a some sliced avocado. Sprinkle some red crushed pepper & sesame seeds onto everything.

🥘 Butternut Squash Soup
⏲ 10 min Prep Time | Serves 6-8
It’s FRI-YAY! 🤩 Wishing I had some butternut squash in my fridge right now so I could make this delicious soup for dinner...😪 Don’t mind me, I’ll just be here...dreaming about this cozy bowl of soup 🍲 If you haven’t tried this recipe yet, it’s a must have!👌🏼

Deets👇🏼
▫️1/2 medium Butternut Squash
▫️1/2 small Sweet Potato
▫️1 Carrot
▫️1/4 Onion
▫️1 Celery Stalk
▫️4 cloves Garlic
▫️1 tbsp Avocado Oil
▫️3 cup Vegetable Broth
▫️1 cup Water
Seasonings-
▫️1 tsp Chili Powder, Cumin, Ginger, Onion Powder, Pepper
▫️1/2 tsp Smoked Paprika
▫️2 tsp Salt
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Roughly chop all of your veggies (I didn’t peel the skin off of the squash or SPs). In a pot, add in all your ingredients. Cook covered on low-medium heat for 25 mins.
Then, carefully🚨, transfer to a countertop blender (or use an immersion blender) & blend until smooth & silky 😋.
SOOO EASY! Top with pumpkin seeds, green onions, cilantro, & sesame seeds.
