I’m sure bright green pasta isn’t for everyone but this spinach and avocado pesto pasta screams out to me, and boy did I feel good for eating it. I’ve done this before just blending spinach and or avocado with premade pesto but today I made it from scratch. I don’t tend to measure ingredients, I just taste as I go, but this is roughly how I made the pesto. Blitz together 4 generous handfuls of washed and stemmed spinach, a handful of basil leaves, the flesh of 1 avocado, about 30-40g pine nuts, 30-40g Parmesan, a couple crushed garlic cloves, 2 tbsp olive oil, juice of 1/2 lemon and seasoning to taste. I used water to loosen and help it to blend to a smooth sauce and then stirred into cooked pasta. This has made my tea tonight, a lunch and a couple of freezer stash sauce portions for the boys. Evening meal: Sausage Gnocchi (7sp)

Ingredients (Serves 4): 6 Quorn sausages (2sp), broccoli, 400g tinned tomatoes, 700g passata, 400g gnocchi (5sp), 2 tsps fennel seeds, rosemary, chilli flakes, oregano.

Ingredients
80g cornflour
80g plain flour
½ tsp salt
1 large egg, lightly beaten
175ml sparkling water
350g broccoli, broken into florets
sunflower oil, for frying

For the dipping sauce
1 lime, juiced
½ lemon, juiced
2 tbsp reduced-salt soy sauce
1 garlic clove, crushed
1 tsp caster sugar
½ red chilli, deseeded and finely chopped
Method

1. Mix together the dipping sauce ingredients in a small bowl. Set aside.

2. Sieve the flours and salt into a large mixing bowl and add the beaten egg. Make a deep well in the centre and whisk in the sparkling water, a little at a time, to create a smooth batter. Set aside.

3. Blanch the broccoli in a large pan of simmering water for 2-3 mins. Drain well, then allow to cool slightly in the colander.

4. Pour enough oil into a large saucepan so that it comes a third of the way up the sides. Place over a high heat until it reaches 190°C. If you don’t have a kitchen thermometer, drop a small cube of bread into the oil – if it turns golden brown after 30 secs, the oil is hot enough. Working in batches, dip each broccoli floret in the batter, allowing the excess to drip off, then carefully lower into the oil with a slotted spoon. Fry for 2 mins or until crispy and an even golden colour. Transfer to a plate lined with kitchen paper. Repeat with the remaining florets.

5. Spread the tempura broccoli on a large plate, sprinkle with a little sea salt and serve with the dipping sauce.

Chia kiwi and grapefruit bio yogurt bowls.
Breakfast ‘bowls’ that don’t need washing up 🤗. I realize grapefruit for breakfast is not fashionable, it’s all about smoothie bowls and nicecream. But I love 💕 grapefruits in general and they are excellent regulating insulin levels - always a good thing. These are my chia, kiwi and grapefruit bio yogurt bowls. I blended a whole pink grapefruit that was cut neatly out of its skin with two tablespoons of kefir yogurt and stirred in two table spoons of chia seeds. Left the mix in fridge for and hour or so ( this works overnight as well) Picture 2 is no added sugar, I love the pure grapefruit taste. Picture 3 has honey and toasted almonds. Picture 5 tells you I’m serious about a healthy breakfast 😐!

A lighter evening meal tonight because the boys and I went for an impromptu lunch out today. Is anyone else just so ready for salad season now? I’m starting early and no one can stop me. This sesame and lime noodle salad with shredded veg has got me dreaming of warm summer evenings eating in the garden. I can not wait. I love winter food, I love soups and stews and warming bowls of winter goodness but I’m ready now for the changeover now. The sunshine just has to catch up with me. .

For the salad: (You can of course use whatever you have to hand. This is just what happened to be in my veg drawer today!) .
Rice noodles
Red cabbage
Spring onions
Grated carrot
Red chilli
Coriander
Red onion
Sesame seeds
Handful of peanuts (which I forgot about and chucked on after I took this picture) .

For the dressing:
2 tablespoons of honey
1 tablespoon of sesame oil
A few slices of fresh red chilli
A teaspoon of rice wine vinegar
A squeeze of lime .

Cook the noodles and allow to cool. Shred all the veg and mix with the noodles. Add all the dressing ingredients together in a jar, give it a good shake and pour over the noodles. Add a sprinkling of coriander and peanuts. Delicious!

Little Alex loves broccoli - steamed, roasted or stir fried. We always make sure we cook it so it’s soft enough to gum. A good rule of thumb is if the stalks are soft enough to squish, then you’re good to go! 😁 (always make sure it’s cooled down before serving and keep an eye on them when they’re playing with finger foods!) 🙌

Managed to make a yummy soup yesterday just buy roasting all these veggies in the oven and then sticking them in the blender. The other half became an awesome sauce for my lasagne. 2 meals for the work of 1 pretty much. The house smelly amazing too, which is always a bonus.

Lasagne is one of those meals I don’t make often. I love it, but I don’t like all the work that goes into it - the two fillings and the layering in a regular and a dairy free version just feel too time consuming to make from scratch for a regular meal 🤷🏻‍♀️ But with a load of veggies roasted yesterday, a jar of pasatta with basil and a freezer stash butternut cheese sauce this came together really quickly last night. The previous day I roasted a tray of red onion, courgette and peppers for about 20 minutes, added diced chorizo for 5-10 minutes and finally kale for a further 5 minutes. Cooked then stored in an airtight container in the fridge overnight. Yesterday I got a deep dish and layered up. Layer some of the roasted veggies with a couple spoons of passatta, lasagne sheets, butternut cheese sauce, more lasagne sheets. Repeat the layers to fill the dish (we had 3 layers of veg) and end on a layer of cheese sauce. Top with grated cheese then oven bake for about 40 minutes for the layers to cook through. We had it served up with salad and garlic bread. I have only made lasagne for Jack three times, previously with traditional bolognese, and each time he hasn’t eaten it. He eats roasted veg & chorizo / bolognese sauce, cheese sauce and pasta but not lasagne. It’s like pasta in a sheet is some form of alien food as he becomes highly suspicious of what it is im giving him🤷🏻‍♀️ Today he picked out the chorizo and some veggies and left the rest. For that reason I won’t be rushing to make this again, which is a real shame as it was so so tasty and actually felt really easy with the premade fillings. SUPER Easy..Instructions for chicken in tomato red onion and celery sauce. 🍗 🤗 .

Ps. The pic shows the thighs without sauce poured over and also once I had poured the sauce over. .

• chop tomatoes sprinkle with paprika and salt and set aside .
• chops 2 x red onion, 2 garlic cloves and 2 stalks of celery sprinkle with salt and brown in some hot coconut oil. .
• Add tomatoes and splash of water...
• Add your spices just a pinch of each (see pic in post below) • when tomatoes look thick, rehydrate then do this again. .
• Add the chicken (skin on or off its your choice but on means more fat 🤷‍♀️) • Once chicken is in the tomato sauce cover it just to the surface with water (cold)
• I then threw in some chopped carrots .
• Cook on a high heat until boiling. Stir a couple of times.
• Reduce to a simmer take lid off and set your timer to 30mins (don’t worry the chicken will be safe to eat after only 30min. Yes even on the bone!) • After 30min you can then taste test and add what you feel it needs, more salt/paprika etc .
• turn gas off and let it sit for 1-2 min before serving.
I sprinkled chopped parsley over mine .

☀️ Don’t worry if you add too much water- just boil with lid off for a little bit longer..it WILL thicken.
☀️If in doubt - add more paprika! ☀️ Don’t worry if you don’t know how much of spices to add either. Start with just a pinch of each and then add more if needed at the end but not curry powder that will not taste good if added at the end. .

Simple chicken thighs boiled a tomato red onion and celery sauce 👌 see pic for literally the most basic ingredients. .
The key here was to brown the onions first and then rehydrate the whole sauce with tomatoes etc twice before adding the meat. I also used coconut oil this time as it handles the heat better and this also gave a very subtle coconut flavour. The red onions and carrots made this rather a sweet dish.
Once you make sauce like this you can literally vary it to almost anything, curry, creamy sauce, bell pepper sauce, Italian, African style etc etc
It’s such a versatile way to cook your meat and it makes the chicken thighs very succulent too. .

I actually like basmati rice with my chicken stew (and coleslaw) however I couldn’t photograph my plate as it was just a mountain heaped with food 🤭🤭 I had it with organic brown rice tonight but chicken stew with anything has to be my top 2 comfort food 😍

Coconut chicken curry and quinoa with a simple side of broccoli and cabbage. I want to add more superfoods to everyday recipes, and simple additions that don’t take anything away from flavors are good for all the family. The quinoa made it completely unnecessary to have rice or bread, and large serving of veggies made the entire plate completely satisfying. The kids ate everything even my 5 year old #eatthemtodefeatthem Edit; coconut curry is a good entry level for young tastebuds to get introduced to new flavors, it’s mild, creamy and adds allot of flavor to anything it’s paired with.

We’ve been out (and outside) most of the day so needed a really quick and warming dinner when we got home.
This made-up-on-the-spot Rose Harissa Chickpea Stew was just what we needed. ( I did it all in a pan but it would also work in a slow cooker)

3 cloves of garlic
1 white onion
2 tins of chickpeas,
1 tin of kala chana (or more chickpeas), 1 tin of chopped tomatoes
1 cup passata
2 chopped preserved lemons
2 tablespoons of Rose Harissa
A handful of kale
Salt and pepper.

I sautéd the onion and garlic until soft and then added the harissa, the chickpeas and kala chana and cooked for another couple of minutes. I added the rest of the ingredients, gave it a good mix, stuck the lid on and left it to thicken. That’s pretty much it! Super speedy and simple.
We had the spicy stew with barley couscous sprinkled with pomegranate seeds and pine nuts. The rose harissa, couscous and preserved lemons were from @belazu_co who sent us some goodies to try this week and were absolutely delicious. I’ll take a close up of the packaging in stories so you can see which they are. The lemons are particularly exciting. Can’t wait to use them in something else. .

My 6 years old loves it boiled with a bit of Parmesan on top.
I myself eat it row in salads because like a lot of kids I’m not a fan of its bitterness when cooked.

You’ll find it only in our Fish and Vegetable Crumble this season.
As we pledge to mainly use British organic harvest, you’ll find plenty of it in our meals from June to November.
