I have fallen down the rabbit hole of breadmaking. I am absolutely a beginner at this! It took me MONTHS to get one sourdough starter to take. I fed it, I gave it more attention than my babies. It was lovely and yeasty - for two days. Then, like a teenager, it turned sour and stopped responding. I need more wild grapes. Our vines have months to go. So I’m back to yeast from a jar for now. But that’s not stopping me, I’ve become a bit obsessed.
It all started because I finally assembled my stone baking oven, which is pretty great. But I naively thought it would instantly produce crusty pizzas and artisan breads. My first few attempts were, well, pathetic. Then I started reading. Everything I learn only convinces me how much more I have to learn! I google kneading times, cold proofing vs. warm rising, wood fired vs. steaming, whether to add salt, fat, or sugar, and when. Then I have to try it all out. I have gone through half of a 50lb Costco bag of bread flour, in, like, a week. Luckily I have four kids to feed. We go through a lot of bread, pizza, cinnamon rolls, tortillas. What else can you make with all this dough?? Really. Please. Tell me!! I’ll be bread-bombing the neighbors soon. Two weeks ago I couldn’t have told you what a banneton or a lame is, (the covered basket you rise bread in, and the razor you make cut patterns in the crust with). I now own both. My little girls like slime, I have them kneading batches of “flour slime” - ok, yes, it’s dough... but my arms are tired, and those girls are good kneaders, plus it keeps them occupied for hours!
It’s kinda like when you get your first baby chick. You had no idea what you were in for. Twenty chickens and three coops later, there’s no turning back. My bread results are still pretty embarrassing. So I’m only showing you a picture of rising dough. Lots of y’all out there are way more experienced than I am. Tell me your advice! I’ll be posting photos of golden artisan boules soon. Right??😂🤞🏻
