The reason you should eat fruit in morning is because fruits contain natural sugars. When you eat fruit in the morning, your body has the rest of the day to evenly distribute the sugar to use for energy.

Black bean burgers with a squash bun! Making your own veggies patties is great because you can add in just about anything!
Here I used..
🎈black beans🎈carrots 🎈spinach 🎈quinoa 🎈chia seeds 🎈egg
🎈seasoned with salt pepper turmeric paprika and garlic 🥣 I put all the ingredients in a bowl and mashed up the beans. Makes sure you rinse and dry them well first because you don’t want too much liquid when your cooking them. Adding the eggs is optional however the patty stays together much better! I used olive oil and sautéed on each side from about 5 minutes on medium heat. I cut the squash in rounds and seasoned with Italian seasoning and baked! I put veganaise and ketchup on top ☺️ ❗️Gluten free and easily made vegan if you leave out the egg!

¡Hola! Espero hayan tenido un súper fin de semana 😃 hoy les vengo a compartir esta receta deliciosa y súper fácil de hacer.

El chop suéter se hace cocinando primero en aceite un poco de cebolla y ajo. Después, al ya estar amarilloso se le ponen verduras cortadas como en este caso papa, zanahoria, ejote y calabacita y 3/4 de casi de agua. (Primero poner los más duros y después de 5 minutos los más suaves). Después de 5 minutos que se pusieron las verduras a cocinar al vapor se pone la soya y de condimenta con salsa soya, sal y pimienta. Se deja cocinar por 5-8 minutos más y estará listo. 😍🍽️

The chop suey is started by putting some oil in a pan with onion and garlic. Later, when yellowy put cut vegetables in it. this time I put: potato, carrot, green beans and zucchini and 3/4 cup of water. (First put the toughest and after 5 minutes the softest). After 5 minutes put the soy and the condiments: soy sauce soy, salt and pepper. Leace cooking for 5-8 minutes and ready. 😍🍽️. .

CARROT CAPPUCCINO SOUP

Preparation: 15 minutes / Cooking: 20 minutes
Ingredients:
• 1 tbsp ghee
• 200g carrots, finely chopped
• 1 shallot, finely chopped
• ¼ chili
• 1 clove garlic, grated
• ½ tbsp ginger, grated
• ½ tbsp mustard seeds
• 1tsp anise seeds
• 1tsp coriander seeds
• 1tsp cumin
• 1tsp black peppercorns
• 1 ½ cup chicken broth
• ½ tsp turmeric
• ½ mango, chopped (optional)
• Juice of ½ lime
• 1 cup coconut cream
• ½ cup heavy cream
• salt and freshly ground black pepper
1. First put anise, coriander, cumin and peppercorns into a mortar and grind it. This is a very important step to let the flavour and aroma develop, so don’t miss it! Once it’s done, add turmeric and set aside.
2. Now melt ghee in a medium-sized pot, add mustard seeds and cook untilit start to pop, than add all remaining prepared spices with chili.
3. Add ginger, garlic and shallot and cook for a minute. Followed by carrot. Let it sauté for 3 minutes, cover with chicken broth and than cook for about 20 minutes covered, until the carrot is soft and mashy.
4. Blitz with your stick blender with mango cubes.
5. Stir in coconut cream,heavy cream and lime juice, add salt as needed

I’ve been searching for broccoli sprouts ever since I heard @theguthealthmd talk about them & today I found them 🥦🤘🏼
These lil sprouts are rich in a compound called sulforaphane (which is 80% bioavailable) and works to:

We may not all be familiar with the different types of scientific study designs and because of this, we can be misled by studies that show seemingly plausible results.

However, once you understand what is going on, you will notice that some studies use an improper study design for what they are measuring.

For example, some studies find no association between egg/cholesterol consumption and incidents of heart disease.

However, these studies use a poor study design, as cross-sectional study designs are not capable of finding a link between egg/cholesterol consumption and heart disease due to variability in baseline cholesterol levels.

Two people that eat the EXACT SAME diet can have vastly different cholesterol levels just due to their genes, and therefore having a lower risk of heart disease.

And how long have we known this? This must be groundbreaking news because there have been so many studies in the past 10, 20, 30 years that have shown that eggs have no effect on our cholesterol levels that use cross-sectional designs!

We have known this since the year this study was published in 1979 in the American Journal of Epidemiology.

When we look at studies on cholesterol that use the appropriate study designs, we are able to paint a more consistent picture.

This cashew caramel slice (recipe below) is one of our most made treats, and the feedback is amazing!
I’ve never liked this photo (it was taken so long ago, and isn’t in focus), but since the recipe is SO delicious, I still share it. Scroll down our feed if you want a nut free/cheaper version, too.
Cashew caramel slice

BASE

3/4 cup pecans
1 1/2 Tbsp coconut flour
1/3 cup cacao powder
9 medjool dates, pitted
Pinch of good-quality salt

1. Line a 15cm square tin with baking paper (I stick mine down with a little coco oil)

2. Add all ingredients besides the dates to a high-speed food processor and process into fine crumbs. Next, add dates and pulse until a sticky ball forms.
3. Press dough into the lined tin, creating a firm and even base layer

CARAMEL LAYER

2 cups medjool dates, pitted
1/2 cup roasted cashew butter
1/4 cup rice malt syrup
1/4 cup mesquite powder (or lacuma)
1/2 tsp good-quality salt
1/4 cup coconut condensed milk
1. Add all ingredients to a high-speed blender, and blend until very smooth. You will need to scrape the sides at least one.

2. Pour over your base layer, smooth with a hot spoon, and set in the freezer while you make the chic top.

CHOCO TOP

1/4 cup coconut oil, melted
1 Tbsp roasted cashew butter
1/3 cup rice malt syrup
1/3 cup cacao powd

How do you get your protein?
One of the most common question asked as soon as someone finds out I’m 💯% whole Food Plant Based Vegan.

I also hear - it’s too expensive or I don’t have time.
This meal took me less than 10 minutes to prepare. It’s packed with phytonutrients, anti-cancer ingredients, and most of all, it was sooo yummy. By the way, had more protein than meat. (I typically don’t count amount of protein I consume each day. I just eat whole food - fruits, vegetables, legumes, whole grains and nuts/seeds.

Boil black bean noodles for 5 minutes. Then drain the noodle and rinse with cold water.
Add oil free tomato sauce, onion, garlic, cayenne, paprika, red pepper flakes, mushroom, sliced tomatoes, spinach, arugula and kale.
Cook for another 4-5 minutes.

Boom 💥 10 minute pasta done.

If I can do it, so can you. You have to make a choice... Put your health as top priority or make excuses to be unhealthy. It’s your choice.

I don’t think ND students (or other health profession students really) learn enough about these approaches, so I am thankful Dr. White presented this morning. The rest of the afternoon was spent talking to other providers and learning about some of the amazing cancer research that is happening at OHSU. 🔬We ended strong with an awesome presentation on equitable, sustainable, local food systems and how docs should be involved (!) by another beloved NUNM professor, Dr. Patterson. 🥦

My Heath Journey – Installment #3

From the moment I landed at Armstrong International Airport, in New Orleans, I went into the mode that I thrive in best --organization. I started systematically de-constructing the life I had built over 45 years, and micro organizing what would become my new life when I left.
I am still amazed when I look back at what I managed to accomplish in a 12 month period while holding down 4 part-time jobs and fixing my house in my free time. Where on earth did the energy to get it all done come from?
One year and two weeks later on July 28th, 2007 I closed on the sale of my house. I stood outside the lawyer’s office with my Realtor, Stephanie. I had a big fat check in my hand. She looked over my shoulder and into the rear seat of my car. “Dat’s all you got left huh, gurl?” “Pretty much…that and the closet in Atlanta. Everything else is g-o-n-e.” “Hhhmmm” she said as she shook her head back and forth. “You somethin’ else.” She wasn’t lying. I had liquidated my entire life. Sold nearly everything I owned. I had rented a closet sized storage unit in Atlanta ( 5’ x 5’) and it was only half full with mostly personal items and artwork. Everything else I owned either fit in my car, or was gone. It felt GREAT to be rid of all that stuff.
I, however, felt pretty shitty.

I got in the car and headed East on I10. As I slipped up and over the High Rise in New Orleans East in a blinding rain, I had WWOZ tuned onto my radio. Bill DeTurk hit the play button from the studio and it was Rebirth Brass Band singing “Do What You Wanna.” Perfectly fitting for my exit.

It was a week unwinding on Pensacola Beach and then back in the car for my trip back to my hometown of Boston. My girl Adrienne had a job to do. She was going to get me cleaned up – mind, body and soul. I was more than ready.

Change. It’s amazing and yet we resist it. I decided to change the way I eat. The way I think. The way I communicate. The way I move. The way I see myself & so much more. It’s really hard because it’s breaking years of programming; but I’m doing my best. I eat mostly vegetarian and I eat when I’m hungry. I try to steer clear of sugar, fast food and junk food. I don’t believe in extremes or diets. I believe in balance and also eating whatever you want now and then. I’m pretty chill on weekends but I eat really healthy during the week. Small changes made a huge difference and I feel better than I had in a while; I also have way more energy. I eliminated alcohol almost completely, I don’t smoke and I drink lots of tea. I always enjoy what I eat and I never feel hungry. I started practicing yoga and connected to myself. It’s never ending and that’s OK. All we have to do is show up and without even noticing, change happens. I’m grateful I’ve struggled with my weight since I was young because I learned how to eat. My way isn’t the only way but it’s what has worked for me and many had asked about this. Enjoy your food and try to make it as plant based as possible. Plants are medicine and can help enormously. Also, self care starts from within. Eliminate toxicity of all kinds and it’ll do wonders for your body, mind and soul. How you treat and see yourself will be how others treat and see you as well! ♥️♥️♥️
