It’s a passionate love affair to create food from your childhood reinvented to meet your dietary habits of today.
This one is a special one for me. Remembering trips to The Community Drive In on Hwy158 in Roanoke Rapids With the folks cruising in whichever car Dad had at the time. (He has a car love affair as much as mine is food). Community drive In has been serving food since 1954. The paper wrapper is an imperative part of the nostalgia.
Oh, and the pizza burger at another spot on Hwy 158, this one was closer to the lake house. Not a drive In location, but dark with wooden booths and lots of vinyl. It was the only thing I would eat there. That’s another nostalgia burger.

Have you ever wondered who invented
Tuna Tartare?

From what I gather, it was Chef Shigefumi Tachibe who is credited for creating Tuna Tartare while he was Corporate Executive Chef at the Chaya Restaurant Group.

Legend has it, in 1984 a group of diners at Chaya Brassiere who didn’t want Steak Tartare, which was part of the multi-course prix-fixe menu at the time, they wanted something different.

Chef Tachibe went into the kitchen and came up with this lighter version. The diners loved the dish and it became very popular at the Chaya restaurants.

Four years ago, I was able to experience Chef Tachibe’s original Tuna Tartare dish served tableside at Chaya DTLA.

Epilogue:
After 31 years at Chaya restaurants, Chef Tachibe has moved on, but his knife appears at the Smithsonian. I guess they recognize him as the creator, right?

As of 2018, the CHAYA restaurants have permanently closed.

You can still enjoy Chef Tachibe’s food at his restaurant in Pasadena, @osawapasadena. Tuna Tartare isn’t on the menu, but they have many other delicious dishes.

I had Borscht today. Classic. Beetroot-based bliss. Just like the Borscht I had in Ukraine 11 years ago (except that was based on beef stock)

Ukraine is the proud motherland of Borscht, though other Slavic countries, like Poland and Russia, dispute this claim. It turns out, they're all right.

The popular beetroot version of the soup probably originated in Ukraine in the 19th century but Borscht has a longer history. The name originally means hogweed (pic 2), a ubiquitous plant in cold wetlands, especially prevalent in the Caucusus region and Eastern Europe.

Sour soup made on a hogweed base has been eaten maybe since the stone age in these areas, and it's only recently the hogweed (named for its piglike smell) was removed and replaced with other veggies.
Borscht later became synonymous with any sour Eastern European soup, and also became a derogatory nickname for Ashkenazi Jews emigrating to the States.

In the 30s, most US restaurants had a "No Jews Allowed"-policy (and, as an unfortunate aside, the Nazi program concerning the Jews was inspired by widespread research by the American eugenics movement) so the Jewish community in New York created a resort of eateries and hotels for themselves known as " The Jewish Alps" or "The Borscht Belt". Noone calls Jews Borscht anymore, though anti-semitism is still, amazingly, a thing. Modern hogweed-free Borscht has turned into something of a Slavic symbol of pride and a sense of belonging, of home. It is, literally, the taste of the land.

The Swedish 'Semla'. A cardamom scented wheat bun, with a dollop of almond paste hidden in its centre and shameless amounts of vanilla cream on top. So moerish. A tradition that survived from medieval Sweden when the country was Catholic and fortunate people feasted on these indulgent buns before Lent. Similar to a Scottish cream bun, no? Anything like it in Ireland?

We had these semlor for breakfast at mum's a few weeks back with cups of strong filter coffee to cut through all it's glorious fat and sugar.

#tbt to July 26th 1471, the day Pope Paul II stroked out, allegedly the result of a melon-eating binge he'd partaken in the night before(he put back 3 melons). Fruit was a polarizing food choice in the Middle Ages and Renaissance. It was rare. It was expensive. Europe's nobility loved it, and would regularly eat as much as they could in demonstration of lordly prestige known as feats of gourmandizing. In the 14 and 15th centuries these nobles began cultivating private orchards, gifting each other with fruit baskets, and penning fruit-inspired poetry. The "warrior-nobility" was long gone.

Physicians didnt share the nobility's fondness for it. They thought fruit extremely cold, watery, and incapable of providing any nourishment. If fruit was to be eaten at all, cooking it with warming "corrective spices", plenty of sugar(ultimate "correcting" spice) or copious amounts of wine was a must. These methods were all thought to counteract fruit's cooling nature.

In the United States, the vast majority of diners who ask for buffalo ribs end up with a partial rack of barbecued American bison. But in Arkansas, long-standing seafood shacks cook up buffalo ribs of the aquatic variety. Fishermen have pulled the buffalo fish (the term actually refers to three distinct species of Ictobius, a river-dweller) from surrounding freshwater for centuries.
These creatures are known for putting up a fight after being hooked and for their succulent ribs after being cooked. Arkansans prepare buffalo fish the traditional way: by deep-frying the gamey, flaky meat, which is streaked with dark fat, when it’s still attached to its long, cartilaginous bones. They often serve platters of the individual ribs alongside french fries and hushpuppies, akin to Southern preparations of catfish.

At Little Rock’s Lassis Inn, fried buffalo fish has been a menu staple for about a century. This institution is one of the state’s oldest restaurants, likely opening between 1905 and 1931 (the official date isn’t public knowledge). The restaurant holds a special place in Southern history: During the civil rights movement, African-Americans sought refuge at Lassis, where they could gather, speak freely, and organize.

- 16 ounces smoked salmon, sliced paper-thin
- 1/4 cup extra-virgin olive oil
- 1 medium red onion, cut into julienne strips
- 1/4 bunch fresh dill, minced, plush 4 small sprigs for garnish
- 1 cup sour cream or crème fraîche
- Freshly ground pepper
- 4 heaping tablespoons domestic golden caviar
- 4 heaping teaspoons black caviar

PROCEDURE
.
1. Before you are ready to bake the pizzas, preheat the oven with a pizza stone inside for 30 minutes to 500 degrees F.
.
2. After the dough has been rolled or stretched into four 8-inch circles, place the pizzas on a lightly floured wooden peel. Brush the center of each pizza to within 1 inch of the edge with olive oil and sprinkle it with some of red onion. Slide the pizza onto the stone and bake 8 to 12 minutes or until crust is golden brown.

3. Mix the dill with the sour cream or creme fraiche and freshly ground pepper to taste. Transfer the pizzas to heated dinner plates and spread them with the sour cream mixture.

4. Divide the salmon, and arrange decoratively over the cream.

5. Place a spoonful of golden caviar in the center of each pizza, then spoon a little of the black caviar into the center of the golden caviar. .
6. Cut each pizza into fourths and serve immediately.

Cooking time (4 servings): 4 to 8 mins depending on the thickness of the meat.

INGREDIENTS

- 4 veal schnitzel, 150 – 180 g each (alternatively, use pork or turkey) - 2 eggs - Approx. 100 g coarse-ground flour - Approx. 100 g breadcrumbs - Salt, pepper - Clarified butter and/or plant oil - Slices of lemon, to garnish .
PROCEDURE
.
1. Lay out the schnitzel, remove any skin and beat until thin. Season on both sides with salt and pepper. Place
flour and breadcrumbs into separate flat plates, beat the eggs together on a further plate using a fork.
2. Coat each schnitzel firstly on both sides in flour, then draw through the beaten eggs, ensuring that no part of the schnitzel remains dry. Lastly, coat
in the breadcrumbs and carefully press down the crumbs using the reverse side of the fork (this causes the crumb coating to “fluff up” better during cooking). 3. In a large pan (or 2 medium-sized pans), melt sufficient clarified butter for the schnitzel to
be able to swim freely in the oil (or heat up the plant oil with 1 – 2 tbsp of clarified butter or butter). 4. Only place the Schnitzel in the pan when the fat is so hot that it hisses and bubbles up if some breadcrumbs or a small piece of butter is introduced
to it.
5. Depending on the thickness and the type of meat, fry for between 2 minutes and 4 minutes until golden brown. Turn using a spatula (do not pierce the coating!) and fry on the other side until similarly golden brown.
6. Remove the crispy schnitzel
and place on kitchen paper to dry off. Dab carefully to dry the schnitzel. Arrange on the plate and garnish with slices of lemon before serving.
7. Serve with parsley potatoes, rice, potato salad or mixed salad.

In Vietnamese cuisine there are many types of noodle soup, but the most significant one of Hanoi city is Bún Thang. 😊😊😊 . “Bún” means rice vermicelli and “thang” diverts from “thang thuốc”, which means a unit of herbal medicine, because this dish is made of little amounts of many ingredients, just as a pack of herbal medicine would be.

This noodle soup is traditionally eaten during “Tết” holiday, on the 4th day of the New Year to be precise. On this day, Vietnamese would burn joss paper and perform ritual worshipping to say thanks and farewell to their ancestors whose spirits have come to join the family during New Year’s eve. After that, the remaining food from the last days would be renovated to make “Bún Thang”. .

As all traditional noodle soup, the heart of the dish lies in the broth. The clear hot broth is stewed from chicken bones and shrimps with the cook constantly skimming it. A well-cooked broth is clear, fragrant and has just a little bit of lingering sweet taste of shrimps and dried mushroom. “Bún Thang” is cooked with a few drops of belostomatidae aroma and served with “mắm tôm” (shrimp paste) to make it even more flavorful.

So I saw this huge poster in the mall covering a shop that’s being furnished. And it had a door and a lock. Interesting juxtaposition. Lamb shank, by the looks of it. Potato bread! I have made loads of potato bread but this is the only recipe that had me make a sponge the night before. So I decided to try making it with the overnight sponge and without. The difference is only slight, but I do prefer the one made from the sponge. The bread is a tad flavorless so I would increase the salt.
If you happen to be bored and have some extra turnips, try making potato bread with them. It's an intriguing flavor from just a slight change in the ingredients.

I wasn't in South Carolina long, but I remember it really well. Partly because it was beautiful and that Carolina drawl is one of my favorites,but mostly because of the ᔕOᑌTᕼ ᑕᗩᖇOᒪIᑎᗩ ᕼᗩᔕᕼ. I asked about it at a BBQ place and got laughed at pretty good for having no idea what it was. The lady in the kitchen even stopped what she was doing and I had to explain that I was from St. Louis and we didn't have any of that,up there. After I got my bowl of hash, I didn't expect much because it looked a lot like lunchlady mystery slop but it was 𝐃𝐄𝐋𝐈𝐂𝐈𝐎𝐔𝐒. It's a dish with a deep history too, definitely worth reading up on. I don't usually follow recipes too closely, so I recreated the dish from my own memory. As a St. Louisan, I add a couple of spoonfuls of sugar to just about everything so mine may be a little sweeter than what I had down in South Carolina but it's still good and tangy. It's not a pretty dish but it's delicious and is by far one of my favorites now so I put my recipe up on the blog, for anyone who wants to give it a try 😋 🍴 •

The history of coffee dates back to the 15th century. The native origin of coffee is Ethiopia. A popular story about how coffee was discovered is that a goatherd in Ethiopia noticed his goat eating beans from a tree, after which they got more energetic than usual. He tried them as well and found that they made him more energetic too.

🍖Sausage making is an outcome of efficient butchery. Traditionally, sausage makers would salt various tissues and organs such as scraps, organ meats, blood, and fat to help preserve them. They would then stuff them into tubular casings made from the cleaned intestines of the animal, producing the characteristic cylindrical shape. Hence, sausages, puddings, and salami are among the oldest of prepared foods, whether cooked and eaten immediately or dried to varying degrees.
🇮🇶An Akkadian cuneiform tablet records a dish of intestine casings filled with some sort of forcemeat.
🇨🇳The Chinese sausage làcháng, which consists of goat and lamb meat, was first mentioned in 589 BC.
🇬🇷The Greek poet Homer mentioned a kind of blood sausage in the Odyssey, Epicharmus wrote a comedy titled The Sausage, and Aristophanes' play The Knights is about a sausage vendor who is elected leader. Evidence suggests that sausages were already popular both among the ancient Greeks and Romans, and most likely with the various tribes occupying the larger part of Europe.
🇮🇹The most famous sausage in ancient Italy was from Lucania (modern Basilicata) and was called lucanica, a name which lives on in a variety of modern sausages in the Mediterranean.[citation needed] During the reign of the Roman emperor Nero, sausages were associated with the Lupercalia festival. Early in the 10th century during the Byzantine Empire, Leo VI the Wise outlawed the production of blood sausages following cases of food poisoning.🤢🤮
In my writing today I learned about Clemence Lefeuvre, a female chef (1860-1932) who is credited with creating "Beurre Blanc," (white butter) by whisking champagne vinegar into melting butter, and adding white pepper and shallots. My character is a young French woman with a knack for cooking. She will whisk up this sauce in her own kitchen in a later chapter. Burekas, a savory filled dough (puff pastry), usually associated with Turkish cuisine but like so many other recipes it has different beginnings. This one actually has nomadic Central Asian roots, before Turkey was established. The Ottoman Empire was widespread as you know, and this recipe, which became a national favorite made its way all over their empire. In Israel for instance, also conquered by the Ottoman Empire, Jews incorporated slow cooked brown eggs as a side to burekas filled with potatoes or any other savory flavor they pined after. I think my mouth was watering while I plated my potato (mashed) and cheese (feta mixed with cottage cheese and Parm or whatever mixture you fancy) burekas, so I forgot to include the eggs. My research focused on food history and the types of food that were coming to the country in the 18th Century. During this time there was better awareness of how a good diet could improve health and well being, for example Vitamin C preventing scurvy. I liked the idea that you would serve your food in the vessel and as the contents were eaten, the texture in the base would reveal itself. My own grandma didn't like the kitchen, she was just there because she was supposed to be: pressed into a role she didn't love because of society's patriarchal expectations of what a woman should do.

Velko has grown grapes for over thirty years. He was kind enough to invite me to his vineyard and painstakingly teach me the process of pruning. His vineyard sits on a hill overlooking Popintsi just below the treeline. Before we began, he poured out a bottle of last year’s harvest for luck in the growing season. Veliko does not drink, but continues making wine and rakia because he enjoys the process and is referred to by others as an expert. His vineyard consists of merlot, rkatseteli, pamit, dimyat, and others that will all be blended together. Veliko does not use yeast, chemicals, or any additives, making a purely natural wine.
The name of the Theobroma plant genus comes from the Greek for “food of the gods.” The billions of people who love Theobroma cacao, the main ingredient in chocolate, would be inclined to agree. Now cacao’s cousin Theobroma grandiflorum (“large flower”) is blossoming into the spotlight.

Brazilians call this fruit cupuaçu (pronounced coo-poo-asoo) and either eat it raw or incorporate it into sweets. With its tangy flavor and cocoa-meets-pineapple scent, it’s little wonder that Brazilians have found many uses for the plant. Recently, South American creameries have turned cupuaçu into an ice cream flavor, while brewers have started making sour and saison-style beers with it. Although it’s appearing in novel forms, this is no newfangled fruit. Tribes in the Amazon rainforest have relied on cupuaçu for centuries.

Western tastemakers may be looking to cupuaçu as their next big trend—it’s already served alongside the açai berry (an Amazonian “superfood,” now popular in both North and South America). Some companies have even taken the upscale confection route with bean-to-bar cupuaçu products. Reviewers describe cupuaçu candy bars as rich and nutty, with a ganache-like texture and an acidity evocative of “yellow exotic fruits.” The bar is reminiscent of high-quality milk chocolate that lacks the characteristic bite of darker varieties.
Beyond these embellished interpretations, just how does the raw cupuaçu taste? Pretty delicious. Its flesh is soft and sour, with a juice that carries hints of pear and banana.
