Last nights dinner was homemade chicken korma, mushroom rice and a mini naan bread, not the best choice but it was in the freezer and I was too hungry to wait for anything else! 11 ingredient | Healthy•ish | PECAN TURTLE COOKIES 👌🏼
❌Refined sugar
❌Eggs
* 1cup all purpose flour
* 1 cup old fashioned oats
* 1tsp baking soda
* 1tsp cinnamon * 1/2 cup applesauce
* 1/3 cup almond milk * 1tsp vanilla
* 1/4 cup coconut oil (solid)
* 3/4 cup chopped pecans (salted or unsalted) I put mine in a bag and smashed them by hand but you can get fancy and chop to pieces if you’d like 😉
* 1/4 cup @fattoadfarm caramel sauce
* 1 tbsp mini choc chips
Directions: Mix in this order, gently with a spatula. - Bake @ 375 for 10-12 mins (depending on your oven- i did 10 mins) - Let cool on baking sheet for 2 mins - or be like me, have no chill and eat one fresh from the oven so it burns you’re mouth 😂

With all the diets, health fads, supplements and food products out there these days it can be easy to lose sight of the basics. Sometimes we get lost in what other people and “health culture” are telling us we need to eat - “if you just do/eat/eliminate this one thing, you’ll be so much better.” While sometimes those things may be fun to try or have some merit, we don’t need them to be healthy. Health is a long-term journey (and food is just one piece of the puzzle!). ENJOY food. Enjoy food with friends. Eat whole foods most of the time - everything in moderation, we need this journey to be sustainable. Simple meals don’t have to be boring (they’re often better!). Ultimately, we want to nourish ourselves with a variety of whole foods and balance of nutrients that fuel us, give our bodies what they need, and make us feel good. ❤️

This POTATO PANCAKE is something I’ve always loved and every time I come back to Czech Republic, I ask my mom make it for me. Back in the day we would eat it without toppings, just a fried potato pancake but nowadays it just doesn’t seem right to me to eat it this way. To make it healthier, I like to top it with a whole bunch veggies such a rucola, cucumbers, tomatoes, onions and some chicken. Now this is a balanced eating to me. Still enjoying one of the best meals in the world but in a “just a bit healthier” way.🤩🥗🥒🍅🍗. Happy Friday everyone!

I see some people fail at this. It’s by all means, not an easy thing to do. How do you tell someone they’re killing themselves with their habits but are still sensitive to their emotional needs? How do you go from one room, where you’re excited for them that they no longer have cancer to the next, where someone is dying? I flip my emotions like light switches all day long. It’s why I come across as having no emotions. After awhile, you know how to put up a front and hide them or else you’ll be an emotional wreck everyday at work. Nurses see a lot of things in their career lifetime. Some are great! Some are awful. Some are highly weird and you can’t make up those stories if you tried. We are nurses 👩🏻‍⚕️💜. .

Here is the recipe for 2 mini pan:
Base:
1 cup almond flour
3 soaked medjool dates
1 tbsp coconut flour
1/4 cup maple syrup
Filling:
1 medium orange
1/2 cup light coconut milk
1/4 cup maple syrup
1 tbsp arrow root starch
1 tsp agar agar powder
1. In a food processor, combine all crust ingredients and press down in your mold
2. Blend all filling ingredients
3. Cook on medium heat on stove until thicken
4. Pour on top of your base and let it cool in room temperature
5. Transfer to fridge to set for 3-4 hours

Our faith and fitness journey is just that. It's a journey. ⠀

If you've traveled anywhere, you know that it takes time. There are twists and turns and stops along the way, and even when we get to our final destination there are new things to explore. ⠀

No matter where you are on this journey, you are right where you are supposed to be. ⠀

Too many times I've found myself looking back with regrets or trying to recreate the exact steps that I thought got me to a place I wanted to be. ⠀

And then other times I wasted time with thoughts like "When I finally ______ then I will be happy" or "When x happens, then life will be as it should." ⠀

What about right now? ⠀

If we spend our time regretting or trying to recreate the past or focusing on what life will be like in 10 pounds or when I hit a certain milestone, then we miss what NOW has to offer. ⠀

This journey is a process. Certainly we can learn from things we've gone through and set goals for what's ahead, but we must also honor where we are right now. ⠀

In fact, honoring where we are now is what allows us to move forward to where we need to go. ⠀

If we don't acknowledge this stage of life then we get confused about what's ahead or next steps to take.⠀

And of course, all journeys are better when you're traveling with someone. ⠀

Honor where you are today...and grab a travel buddy for the journey. ⠀

Dinner last night was all prepared in the oven on sheet pans. Makes life so simple. Brown Sugar and Garlic Chicken. 🍗🥔 I melt butter (you can use ghee), avocado oil, red pepper flakes, lots of garlic, cumin and brown sugar. I pour over chicken breast and potatoes that I have seasoned with salt and pepper. I throw in oven at 425 covered with foil for 25 minutes and then uncover and put back in oven for another 20 minutes or until potatoes tender and chicken cooked. I roasted some broccoli 🥦 with balsamic and extra virgin olive oil in oven for 10 minutes. #lesleyslunches #healthyish #sheetpandinners #aboutlastnight

Wild arugula + Salmon kale burgers + some huge asparagus from @ourismarket + roasted artichoke bottoms (I did literally nothing but lay these frozen on parchment and sprinkled oregano and bake the crap out of them) + grape tomatoes + pickled red onions (can’t stop, won’t stop). Drizzled the whole thing with some balsamic vinegar and a spray of olive oil. ~

HALF WAY THERE!

Exactly 4 months and 20lbs ago I decided it was time to make a change. I looked in the mirror and did not recognize the person looking back at me. She had so much fluff on her body and sadness in her soul. She was facing high blood pressure and shortness of breath when going up one flight of stairs.
But how could this be? She was an athlete and always exercised!
The last 4 months have been hard. I faced the holidays, which normally would have gifted me 10 extra lbs, but only gained 3! I went on vacation and maintained my exact weight and still enjoyed myself.
I have been working on the psychology behind weight and it’s working. I already knew what to do as far as portion control and exercise, I just couldn’t make myself do it! But when I looked at the “why” I was over eating, it came together.
I love my life in moderation now. Yesterday I ate too many Girl Scout cookies. But it’s ok!
The last 4 months were the hard ones. The next how ever many months and 20 more lbs will be fun! I’ve got this and now I will see the blood pressure return to normal. The clothes that have been hanging in my closet for years will begin to fit again. But best of all I will know that I did it! I stuck to it and persevered when it was hard and the scale didn’t move, and my SAD kicked in, and I felt like maybe I was just destined to be fat. I recently wrote an article for @recmidwest about Intuitive Exercise. No matter what fit phase you're in, this mindful philosophy can work well for just about anyone. IE for me now as a pregnant mama is different than it was for me pre baby. Here are some general guidelines if you're wanting to be more intentional with your workouts. Overall, it helped me reconnect with my WHY.
⠀⠀⠀⠀⠀⠀⠀⠀⠀
✻ Do what you love, not what you dread. Tune into your body. What does it feel like doing? Has work been stressful? Are you super sore from a previous workout? Do you feel a nasty cold coming on? Have you been doing mostly high-intensity lately and need something more restorative?
✻ Work with your body not against it. Honor whatever movement the day brings with open arms. It’s important not to let your mind talk you out of what you intuitively need and to feel satisfaction in all forms of movement. If walking the dog with friends on a Sunday is what your body craves, then rock it and know that it is enough, no matter the result or the intensity.
🎶: Pick a workout or a playlist to match your mood. If you're needing some zen but still want to sweat obvi Soul Cycle isn't a front runner that day. (A new playlist always helps me get motivated BTW)
💕: Remind yourself that you are exercising because you love your body not because you want to change it.
🙏🏼: Find joy in the sweat. Focus less on numbers and stats and more on how you feel in the exact moment. Remind yourself that you are healthy, vibrant and strong.
