This translates into a meal request. It surprised me even more when her sister did the same and said "remember that time you made #baconcheeseburger" 😑 I'm seriously thinking they planned this. Oh well, in the immortal words of courage the cowardly dog "the things I do for love". Another night of #beef and potatoes it is.

This salad is a perfect example. Everything here is a real food — no processed foods on this plate (well, technically the canned beans are processed, but they’re just black beans and salt).

Salad greens, hard boiled eggs, carrots, black beans, and walnuts make the salad. Some healthy fats and protein round out the greens, making this a more filling meal. A drizzle of olive oil and local honey, plus a sprinkle of sea salt add flavor. 🥬🥚🥕🍯

By mostly sticking to real food, and avoiding packaged, processed foods, we end up saving money on groceries each month. Yes, there’s a little more legwork involved, but it’s healthier, cheaper, and it tastes delicious. 😋
WORKOUT WEDNESDAY: I don’t know about y’all, but I will absolutely run for carbs. Fun fact: the ideal pre-workout meal is high in carbs and low in fiber in fat. My fave is cereal!

Being a mom means exposing my son to as many foods as possible. When he didn’t really like the texture of meat, I turned to plant proteins. Edamame is an excellent plant based protein because it contains all of the essential amino acids (building blocks for protein), it’s low in carbohydrates and fat too! These little beans are yummy alone, mixed into salad, or stir fries. How do you like your edamame?

Anyone else just love a quiche?
Veggie packed meatballs 👌🙌 these are really versatile for meal prep, some ways I use them ✅ slice and put them on a sandwich/wrap with salad and avocado
✅ combine with rice and tzatziki
✅ salad bowl ✅ or eat a couple as a snack on their own 👌
Recipe makes 20 meatballs where 3 is around an individual serve (150 G protein)
1 kg mince (I use turkey)
1 large Zucchini, grated
1 large carrot, grated
1 large purple onion, finely diced
3-4 tbsp mixed Italian herbs
1/3 block of feta cheese, finely diced
1 egg
Salt and pepper to taste
1 tbsp olive oil to cook
Combine all ingredients in a large bowl and then roll into golf ball size. Either place in the oven on a baking tray for 20 minutes on 180C or pan fry on medium heat for 20 minutes turning every 2-3 minutes. Pan frying makes them brown but oven can be more convenient 👌

My NEW Fav easy and cheap taco meal prep recipe !!🌮🌮🌮 Anybody in Gainesville on a budget, go to Lucky’s Market! It is the cheapest way to eat very good produce and make it affordable :) Place chicken in pot and add water, boil for about 15-20 minutes. Take out and shred the chicken.
Chop up any veggies you want to add, I use bell peppers and a red onion for good flavor!
Cook all of that in a skillet, then ad El Paso taco seasoning and cook for about 5 more minutes!
Makes the perfect meal prep! Sometimes I even add Chickpeas and Black beans for some more protein. The salsa I eat it with is very low calorie (10 cal per 2 tbs)

It took me years to do but I finally mastered brussel sprouts! We LOVE to eat brussel sprouts when they are on a menu at a restaurant (I know, we're weird, but if loving brussel sprouts makes us wrong, I don't wanna be right!) But making them at home has never worked! They were either tasteless or I had to add too many things that upped the "not healthy anymore" factor. Today they were on point! Steamed for a few minutes, then roasted with salt pepper, olive oil and balsamic vinegar YUM!! Oh and we had a healthy version of chicken cordon blue (or is it bleu 🤔), two thumbs up!! 👍👍

Did I make breakfast for the next couple days! You better believe it! I took some plain bagels from #wegmans and removed the insides, filled it with eggs, cheese, and bacon. Popped them in the air fryer for 5 minutes at 370° and they came out great.
Gonna throw a couple in the freezer for a rainy day when I don’t have time to make breakfast. Not sure what the point value for WW would be though. We kicked around the idea of buying one of these jewels for awhile and finally bit the bullet and bought one after many rave reviews!! Haven’t used it a lot outside of my meal prep but I must say it’s a must for meal preppers.
8 chicken breasts and a splash of chicken stock and 30 min later...BAM🐔 tasty shreddable chicken Is done for the week.
Brown rice is done in about 25 mins as well and cooked to perfection.
Sunday Meal prep time cut down to about 1 1/2 hours meaning I can then go finish the laundry 🧺 🤣😂🤣😂

Italian Chicken Sausage, Asparagus, Pesto, Cauliflower Gnocchi is what’s on my plate tonight. How about you? This weather calls for comfort food but when I get out of the gym, I’m frantic for food and don’t want a production. This one, like so many of the recipes I highlight here, are easy with just a few simple ingredients. I toss a couple of bags of Trader Joe’s Cauliflower Gnocchi in a little EVOO and put them onto a cookie sheet as well as doing the same to a bunch of cut up asparagus. Put both sheets in a convection oven at 425 until they are nicely browned up. (25 minutes?) While they are in the oven sauté 4 Trader Joe Chicken Italian Sausages on the stove to brown them as well. After slicing them, put all 3 ingredients in a bowl and top them with 4 tablespoons good quality pesto sauce and combine. Plate each serving and salt and pepper to taste. I love a little parm on top as well. This makes 4 meals so either invite friends over or meal prep! I only cook 2-3 days a week and just use Tupperware for future easy heat ups! Planning in advance saves me! #flexatarian #mealprep #veggiesrule

Breakfast salad 🥗 Had a major craving for kale and tahini salad but also eggs so I decided to merge the two and make a breakfast salad for dinner. Massaged chopped kale with lemon juice and tahini. Tossed in cherry tomatoes and cashews and added two scrambled @vitalfarms scrambled eggs. So incredibly easy and delicious! Yay to easy dinners after a long day! #srunsforcake
