Miso grilled eggplants/mushroom, chicken&lotus seed Japanese steamed rice/steamed young mustard greens with snow mushroom/strawberry greek yogurt
I cooked a whole pot of Japanese steamed rice last weekend to make lunch&dinner prep easier this week. Added plenty of chicken tenderloin pieces to add some protein. Also thrown in a bunch of chopped konniyak noodles (you can find those in Japanese grocery stores everywhere) to make it more fulfilling while cutting the calories.
I’ve definitely gained some pounds during the onboarding training for my new job due to excessive snacking (lol), so I’ll aim toward making healthier meals from now on!
