SWEET POTATOES

These tasty tubers are always in season, and they’re just BEGGING to be part of your next meal.
Like other root veggies, sweet potatoes are packed with complex carbohydrates that give you slow-burning and long-lasting energy.
They also Provide nutrients like Vitamin A, Vitamin C, fiber, calcium and Iron.
They won’t spike blood-sugar as rapidly as their white cousins, which makes them great option for those with hypoglycaemia or diabetes.
Still not convinced?
Try adding them (cooked) to a smoothie for some sweetness and a vitamin kick! Then you don’t have to worry about the texture etc if they’re not for you!
Here’s one of my fave ways to make them:
Line a cooking dish with parchment and add 2 cm of veggie broth.
Add peeled, chopped sweet potato, pressed garlic, 2 cinnamon sticks, and some cranberries.
Cover and bake at 400 for about 40 mins.
Serve warm!
