Another easy meal that doesn't take alot of work! Roasted Pork Loin with Roasted Maple/Rosemary Rainbow Carrots and Balsamic Mushrooms

PORK- @traderjoes Marinated Peppercorn Pork Loin (its only about 1lb ish). I browned in a pan on the stove, then placed on a parchment paper lined baking sheet. I added a couple heaping tablespoons of Horseradish over top of it and sprinkled some garlic powder. Bake @ 350° for 50 (I checked it at 40 min needed a little longer)

CARROTS- Cut in half rainbow carrots and put in a bowl. Squirt some maple syrup over them, salt, pepper, 2 chopped rosemary stems, garlic powder. I also poured maybe 1 tablespoons of apple cider vinegar on them - then toss. Add them to your pork pan and BAKE AT THE SAME TIME.

MUSHROOMS- when the pork has about 15 min left, heat in a skillet some EVOO and 2 slices of butter. Add in a small onion of your choice, 5  cloves of garlic, and saute. Then add in 2 larger containers of mushrooms (I used white and portobello) & salt/pepper. Saute and get some if the water out. Add in about 1/4c of balsamic. I also added in some Beef stock once the liquid was drying up a little. Serve when Pork & Carrots are done.

Topped my bowl with some diced #pickles.

Ok y’all. I’ve never bought a #jicama before. I’ve bought pre-cut jicama and jicama tortillas, but today I actually cut up a jicama... and made jicama fries! My kids LOVED THEM. my husband was making fun of me because he didn’t know what a jicama was and said I always bring home random vegetables 😅

These were really good though. I just tossed them with a bit of olive oil, garlic powder, and paprika and threw them in our air fryer (which I use more often than I’d like to admit)

The green and white mixture on this plate is some leftover cauliflower rice & kale concoction that I made yesterday. The fries were the winners for my kids tastebuds though. They ate every single one.

Last grate your favorite (good quality of course) cheese. Tonight I used Romano Lupa, a divine sheep’s milk, aged cheese from @fruiteriemilano

Keto Italianano?! Yes, please!  low carb chicken parmigiana- I breaded thin cut chicken breast in Parmesan cheese and baked it for 20 minutes at 350 degrees.  Then, I added a dollop of marinara sauce and covered it all in a thick slice of mozzarella cheese to broil until golden and bubbly and beautiful.  I served it over zoodles with marinara and a side salad of romaine hearts and tomato with ranch.  I’m stuffed as a tick on a hound dog! This is a fairly quick weeknight meal that everyone in my family loves - Zoodles for the adults and noodles (not today, Satan) for the kiddos. Easy Week Night Dinner! Honey Mustard Chicken | Recipe below! 👩🏽‍🍳
—————————————————————————— 🎉Ingredients: 
4 Yukon gold potatoes 
Broccoli florets
Boneless chicken drumsticks or thighs cut up into bite sized pieces
Salt, pepper, whole grain mustard, olive oil, corn starch, 1 garlic clove, honey (no exact measurements) ———————————
🎉Steps:
- Preheat oven to 350 and throw potatoes in the microwave for 10 minutes
- On a baking tray, spread out a layer of parchment paper. Then add aluminum on one half, folding up the sides to create a wall.
- In a bowl mix together everything from bullet 4 and layer it on top of the chicken. Put chicken on top of the aluminum. - Take out the potatoes and put on the baking tray. Smash them with a potato masher if you wish, add olive oil, salt and pepper
- Throw it in the oven for 30 mins. Take it out and mix around the chicken. Put in for another 30 mins. You can use the broiler for the last few mins if you want your potatoes to be crispy
- Boil your broccoli for 4 mins - plate and voila! 
০ Keep in mind you don’t have to use broccoli, you can use anything you have in mind. Same goes for the chicken, you can use breast - you’d just have to cook it differently. This is a super easy week night dinner that doesn’t require a lot of clean up either. Inspired by @recipe_tin. .

When the chicken’s 2/3 done, toss the onion mixture back in with sherry, lemon juice and a generous amount of capers. Serve over linguine. -

Chicken Milanese(ish) with Roasted Lemony Asparagus 🍋🍗 Ingredients: 2 bunches asparagus (woody ends trimmed), 2 Meyer lemons, 3-4 tbsp olive oil, 2 garlic cloves (grated or minced), 3-4 cups sliced mushrooms, 7-10 small onions like cipollini or pearl (peeled), handful of minced parsley, 1/2 tsp each oregano, thyme, and basil, 2 lbs chicken thighs, 1/4 cup sherry vinegar, 2 tbsp tapioca starch, 1 cup chicken stock 🌌 Directions: preheat oven to 425 F. Toss asparagus with 1 tbsp olive oil and hefty pinches of s&p. Spread in one layer on a lined baking sheet. Heat the remaining oil in a large dutch oven or high walled pot over medium-high heat. Season the chicken with s&p, and then sear on each side for 2-3 min (do in batches). Spread the chicken on another lined baking sheet. Thinly slice the lemons and spread over the asparagus and the chicken. Toss both the chicken and the asparagus in the oven for 15-17 min, until the asparagus is lightly browned and the chicken is cooked through. In the meantime toss the garlic, onions, and spices in the leftover chickeny-oil and sauté over medium heat for 3-4 min. Add the mushrooms and sauté for another 3-4 min, until the volume has reduced by roughly 1/3. Ad the sherry vinegar and scrape all the brown bits off the bottom. Add the chicken stock and bring to a simmer. Mix 2 tbsp of the liquid in the pot with the tapioca starch and then add back to the pot. Stir until thickened like a loose gravy. Slice the chicken and serve with the mushroom sauce and a hefty pinch of parsley 💡 substitutions: can swap sherry vinegar with sherry, Marsala, or any white wine. I think we have a new favorite dinner! I picked up these ahi tuna steaks @aldiusa along with the cauliflower rice. Thawed and marinated the tuna over night in the fridge with a homemade ginger soy marinade. Seared for 2-3 minutes in a hot pan with avocado oil and served with this delicious veggie-packed cauliflower fried rice. It's a hit with everyone!! I'll keep the tuna in mind next time I do a #psmf because the macros are 💣.

I started with a little over a lb of @verlasso salmon. Have the fish guys @central_market remove the skin. When I try to do it myself it always looks like the dog got ahold of it. Cut it into desired portions. Place each portion on a 12”ish sheet of foil. Then smear a generous dollop of pesto sauce (the one on the @central_market bulk bar is the best I have found). Top with cherry tomatoes and capers. Now fold the ends of the foil together to make a packet. Bake at 475 for 10-12 minutes and let rest for 5. The salmon was cooked perfectly and crazy flavorful. All the kids requested more!

One of my fave weeknight dinners that literally requires zero work. I used to think I didn’t like salmon until I learned how to make it the right way — i.e. not overcook it. Whether I’m making my own sauce or using a premade to save time, this bake temp/time combo is foul proof. 👏🏼 .
Ingredients: 
Atlantic salmon portions
Teriyaki sauce (I like the Coconut Aminos version bc it’s g-free with no added sugar!) .
Your fave riced cauliflower mix — I used a riced broccoli/cauli with a little bit of cooked white rice for substance 
Spinach 
Directions: 
Preheat oven to 400. Place salmon on a foil lined baking sheet and spray with nonstick spray. Drizzle with teriyaki and use a spoon to make sure every side is coated. Bake for 12 min — no longer. Promise! 
Mix your piping hot rice + riced veggies together and plate over a small handful of spinach to get it nice + wilted. Add your salmon filet and an extra drizzle of teriyaki. 😛

Preheat oven to 450ºF. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Boil jumbo shells until just shy of al dente, about 3 minutes short of the full cooking time listed on the package. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Combine chicken ricotta cheese, egg, and spices together. Set aside. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Combine cream, parmesan cheese, and garlic. Set aside. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
In a 9x13 pan (see note), pour about 1/2 cup of the cream sauce. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Fill each shell with about 2 tablespoons of the ricotta mixture, dividing it up evenly between all, or most of, the shells. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Place the shells, open side up, in the pan in a single layer. 1 package is about 20 shells. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Pour remaining cream sauce evenly over the top. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Top with mozzarella cheese and cover with foil. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Bake for 10 minutes. Remove the foil. Continue baking until bubbly all the way through and light brown on top, about 10 more minutes. ⠀⠀⠀⠀⠀⠀⠀⠀⠀

CHICKEN ALFREDO STUFFED SHELLS⠀⠀⠀⠀⠀⠀⠀⠀⠀

1 1/2 cups cooked chicken, shredded or chopped⠀⠀⠀⠀⠀⠀⠀⠀⠀
15 ounces ricotta cheese⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 egg⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 teaspoon salt⠀⠀⠀⠀⠀⠀⠀⠀⠀
1/2 teaspoon pepper⠀⠀⠀⠀⠀⠀⠀⠀⠀
2 teaspoons basil, dried⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 teaspoons parsley, dried⠀⠀⠀⠀⠀⠀⠀⠀⠀
2 cups cream (whipping cream)⠀⠀⠀⠀⠀⠀⠀⠀⠀
1/2 cup parmesan cheese⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 teaspoon garlic, minced⠀⠀⠀⠀⠀⠀⠀⠀⠀
12 ounces jumbo pasta shells, 1 package, weight is approximate⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 cup mozzarella cheese⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀
INSTRUCTIONS⠀⠀⠀⠀⠀⠀⠀⠀⠀
Preheat oven to 450ºF. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Boil jumbo shells until just shy of al dente, about 3 minutes short of the full cooking time listed on the package. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Combine chicken ricotta cheese, egg, and spices together. Set aside. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Combine cream, parmesan cheese, and garlic. Set aside. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
In a 9x13 pan (see note), pour about 1/2 cup of the cream sauce. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Fill each shell with about 2 tablespoons of the ricotta mixture, dividing it up evenly between all, or most of, the shells. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Place the shells, open side up, in the pan in a single layer. 1 package is about 20 shells. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Pour remaining cream sauce evenly over the top. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Top with mozzarella cheese and cover with foil. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Bake for 10 minutes. Remove the foil. Continue baking until bubbly all the way through and light brown on top, about 10 more minutes. ⠀⠀⠀⠀⠀⠀⠀⠀⠀

NOTES⠀⠀⠀⠀⠀⠀⠀⠀⠀
A 9x13 pan or a pan close to that size will work best for this recipe. An 8x8 pan is a bit too small to fit all the shells and sauce.
