
So apparently today is National Sweet Potato Day in the United States, but I’ve been craving it so much recently I feel we should talk about how great sweet potato is and maybe join in on this vegetable celebration. 🍠🍠🍠
The sweet potato is an excellent source of beta carotene (maybe that’s what my body has been craving) and this antioxidant vitamin is great in supporting healthy eyesight, the immune system, optimal bone growth and skin health - which is important for our complexion, right?! They are also high in vitamin B6 (great for PMS and irregular periods, ladies), magnesium, potassium and vitamin C. It is high in fibre, but even more so if you eat the skins. The other nutrient it is high in is manganese, heads up to any couples trying to conceive - there is research showing that this mineral assists with creating the right mucus consistency for conception in females. 🍠🍠🍠🍠🍠 To help with the absorption of beta carotene it is best to eat with some good fats, so whack on a large dollop of hummus, or avo, or seeds - or hey like me I’d go all three. This recipe below was inspired by @womenshealthaus it looked so good I had to try and create it.
After baking 2x small sweet potatoes halved in the oven for 40minutes or so mixed with paprika and coconut oil, once soft and plated I added: 1/2 sliced avo, 3 tbsp hummus (this one was homemade - I’ll share that recipe soon!), 1 tbsp hemp seeds, sprinkle of sesame and pumpkin seeds, salt and pepperbush blend, followed by adding some wilted purple dandelion root and amaranth leaves (I think these leaves will become the new kale). It is such a filling meal, and I could go on about its benefits against diabetes and blood sugar regulation and constituents but let’s not get too deep and just enjoy the celebration of sweet potatoes 😊😂
